Easter Ham With Kumquat And Passion Fruit Glaze

Easter meal of ham and vegetablesFor the Ham:

For the Kumquat and Passion Fruit Glaze:

  • 3 cups Fresh Kumquats, sliced 1/8” thick
  • Pulp of 3 Passion Fruits or ¾ Cup frozen pulp
  • ¾ Cup Honey
  • 2 Cups Water
  • ½ Cup Light Brown Sugar
  • 1 Cup Orange Marmalade
  • 1 Tbsp. Lemon Juice

Instructions

  1. Preheat oven to 325°F.

  2. Place ham in a large baking pan, score the top layer of fat with a tip of a knife. Cover with aluminum foil and bake for 45 minutes and prepare glaze.
  3. Place all ingredients of glaze in a saucepan and simmer on low for 40 minutes or until slightly thick.
  4. Uncover ham and baste the ham with glaze. Return to oven and continue baking until internal temperature reaches 145°F.
  5. Remove from baking pan and place in a platter with additional glaze on the side.

*USDA recommends reheating fully cooked ham to a minimum internal temperature of 140°F

Avocado and Lobster Tartine

Instructions

  1. In a small bowl, combine mayonnaise, heavy cream, lemon zest and jalapeño. Add chopped lobster meat and cilantro.

  2. Cut the baguette into diagonal pieces 3 to 4” wide. Slice each piece horizontally down the middle and toast the baguette slices.
  3. Spread some avocado mash on the toast and top with lobster salad. Squeeze some lemon juice on top and garnish with fresh cilantro.
