If you’re in the mood to add a little spice to your grilling routine, this recipe for flank steak dry rub is for you. Great with a simple salad, or make a hearty sandwich with caramelized onions and an herb vinaigrette on a baguette, If you prefer, cut down on the heat by reducing or eliminating the cayenne.
Ingredients
- 2 tsp salt
- 1 1/2 tsp ground cumin
- 3/4 tsp garlic powder
- 3/4 tsp onion powder
- 1/2 tsp cayenne pepper
- 1/2 tsp ground coriander
- 1 tsp black pepper
- 2lbs flank steak
Instructions
- Mix dry ingredients in a small bowl.
- Spread all over steak. Cover with plastic wrap and marinate in refrigerator 1 hour or more.
- Preheat the grill on high heat, about 10 minutes.
- Place steak directly over fire. Cook on one side for 6 minutes, rotating 90 degrees halfway through. Flip, and cook for another 5 to 6 minutes (rotating again partway through), till internal temperature reaches 130° to 135° (for medium rare).
- Remove from grill to a platter. Cover loosely with tinfoil and let rest for 10 minutes. Slice against the grain to serve.
